Quick, Easy, Healthy & Delicious 5 Minute Cookies

Have you ever wanted to make cookies, but just didn’t have the time? What if you could prepare them in 5 minutes and bake them in just 10? Would you make them then? I have to tell you about a tasty simple recipe that I’ve used quite a lot and that my family loves. And guess what... it actually takes just takes 5 minutes to prepare! It calls for the following: Ingredients1 can of black beans1/2 cup of nut butter (almond butter/ sunflower seed butter or tahini will do)1/4 cup maple syrup (or honey)1 tsp baking powder2 tsp vanilla1/2 cup chocolate chips  Instructions:Make sure to grease a cookie sheet with heat stable oil or butter and preheat oven for 350 degrees F (or 177 degrees C)

  1. Place all the ingredients in a food processor or high powered blender (like a Vitamix) and blend until smooth

  2. Stir in chocolate chips

  3. Roll bean paste into balls or scoop out with a spoon onto a place on cookie sheet

  4. Place in oven for 10 minutes

  5. Let the cookies cool and then enjoy!

Note: Make sure to let the cookies cool before eating them as they can be overly soft and mushy before cooling. You can place these cookies in a container for the day or in the fridge for up to a week. A variation of this recipe was given to me by a yoga student of mine and I modified it with the ingredients I had, to create the ones I am sharing here. This woman was an inspiration, she was in her sixties but she attended class every week and the gym every day. She had started her yoga practice in the last few years, but because she kept up with it she was more flexible than most people her age or even younger. So never feel as if you can’t improve. For example, if you’re just starting yoga and you can’t touch your toes, don’t worry keep at it, you’ll find that with practice and patience you might just very well be able to.
